A little taste of heaven..
The title of this post may sound slightly blasphemous, but then again, you haven’t tasted the meal that is about to be described. Believe me, if I could eat just one thing for the rest of my life (and not weigh 500 pounds) this meal would be a serious contender!
We started out with just a few simple ingredients :: bread, cheese, onions, corn, butter, and mint. Using these recipes from a bird in the kitchen and The Wednesday Chef, we created a meal that was sweet and cheesy and buttery and utterly delectable! I am convinced that caramelized onions were made for grilled cheese, just as I now know that buttery corn and mint complement one another perfectly. If you’re looking for a meal that is sure to amaze your family, be sure to give this one a try!
A couple of notes :: We loosely followed the recipes linked above, with a couple of minor exceptions. For the sandwiches we used cheese that we had on hand, which on that occasion happened to be a mixture of mozzarella and Jarlsberg. For the corn, we used fresh corn cut off the cob. Since I haven’t made the original recipes, I can’t vouch for the equality of our ingredients, but I can tell you that our final product was excellent! Also, it takes FOREVER to caramelize onions, but it is beyond worth it. I don’t really understand with what magic butter and heat transform raw onions into a veritable ambrosia, but it happens. It just takes approximately 30 minutes longer than I ever expect or budget for. But you should do it anyway! Because then you can eat this…
