tacostadas! (or: what to make with those leftovers in your fridge)

Why hello random vegetables sitting in my fridge. I think if I add a can of black beans and a can of green chiles to you, you’ll make some tasty vegetarian tacos.

Diced, sauted, oh yum. Ready for those black beans!

Wait, what? Black REFRIED beans. That won’t do at all. Can’t saute refried beans with vegetables without producing something that looks suspiciously like dog food.

Plan B: spread tortillas with beans, then add toppings (tostada-style). But they’re soft, flour tortillas, so hold ‘em and eat ‘em taco style. (Hence: TACOSTADAS!)

Just your average Wednesday in Jess and Meg’s creative kitchen… Unorthodox? Perhaps. Delicious? Indubitably!

Besides, you’ve gotta love a meal that (a) will make all your vegetarian friends happy and (b) requires only ingredients you have on hand.

Fried Fair Food (yum!)

I dare you to say, “Fried Fair Food” five times fast!

We went to the Pima County Fair a few weeks ago, where we (of course) had to sample the fried food. We ate onion rings, fried Oreos, and fried Twinkies.

I think the general consensus was that the Oreos were pretty good, but the Twinkies were hands-down the best.

Yum! Next year we’re totally trying the Fried Cookie Dough. We just ran out of room this year.

I made these Elmo cupcakes for my daughter Eleanor’s 2nd birthday! She said that it didn’t look like Elmo, but I think it was pretty close, given that the red was hard to duplicate. :)

Bacon Jalapeno Grilled Cheese

We made this at Noel’s request. (The poor guy only had to beg for about 4 weeks.) The ingredients are pretty much exactly what you’d expect: bread, cheese, bacon, and jalapenos. And a little cream cheese.

I sliced and sauteed the jalapenos in a skillet for a few minutes first, so they wouldn’t be so raw. I piled them atop bacon and a thin layer of cream cheese.

Then slices of jack and cheddar went on top of the jalapenos, and bread topped it all off.

Needless to say, Noel cleaned his plate.

Meatball subs! Easy peasy - meatballs from Costco, plus a can of tomatoes and a few seasonings. Then split open sub rolls from La Baguette Parisienne (a local bakery), pop in meatballs, drizzle a little tomato sauce, top with slices of Parmesan, and bake at 350 for about 6 minutes. YUM!
